It IS fresh and beautiful. I will be living alone starting in July so I’ll have to do this as well – it’s such a good idea, thank you!
It’s crazy how far you can stretch a few veggies, and feel like you’re living like a queen when you put together a great salad or even a sandwich with some fresh ingredients you might not normally use. I’m lazy, too, so I like to get everything chopped up at once – keeps me from letting it go bad in the crisper 🙂
